" A POT OF GOLD"

For many years in fairytales

We are sometimes told
At the end of a rainbow
You'll find a pot of gold
 
But look into a childs eye's
When mummy wipes a tear
You'll find such love that gold cant buy
Because such love is too dear
 
When you hear a child sing
With a sweet and innocent voice
It makes a lump form in your throat
And your heart rejoice
 
When a fairy blows a kiss
And dances round your head
You may well think you're dreaming
And still lying in your bed
 
When a child is feeling ill
And needing constant care
There is without a shadow of doubt
A fairy will be there
 
They lie beside the child at night
And enhance restful sleep
They protect with their gossamer wings
They're mind and soul to keep
 
When there's been a winter
That's grey, and wet and cold
To see a daffodil covered valley
A gold sight to behold
 
When a friend has been away
Their space has been left cold
But when they're back into your life
Another pot of gold
 
So please don't think you'll only find gold
At a rainbows end
Pure gold is found throughout your life
On that you can depend.

                                   Wintery Days
 
Christmas is gone
And Winter is here
The cold is a problem
For pensioners all year
the days can be bleak
The nights are so cold
The struggle to pay bills
When you are old
We all like some sun
The warmth on our face
To brighten our day
Wherever the place
We look forward to Spring
A time of re-birth
When the rays of the sun
Warm the good earth
It brings forth the flowers
And birds to the trees
A sunny Spring morning
Cant help but please
We all hope the sunshine
Is going to last
And bleak days and cold nights
Are put in the past
Although Wintery days
Can sometimes be nice
With snowdrops in bloom
And skating on ice.

Spring Fairy's Almond Cherry Cake
 
4oz plus 1 teaspoon of softened butter
5oz castor sugar
3 large eggs
3oz ground almonds
2oz plus 2 teaspoons of self raising flour
4oz glace cherries
1 teaspoon vanilla extract
 
 
Pre heat oven to gas 4,  180 deg centigrade
Grease and flour cake tin with the 1 tsp of butter and 2 tsp flour
Beat together butter and sugar till creamy
Add eggs one at a time alternating with spoons of almond
Fold in flour, cherries and vanilla extract
Turn mix into tin, then tap the sides of tin to settle contents
Bake 50 minutes or until a warm dry skewer comes out of centre of cake
This cake will not rise very much, that’s how its suppose to be
It will keep moist for about 10 days.
